The Great BIG Crunch


At Jackman, we encourage everyone to bring healthy, waste-free snacks to school.   

So on March 1st, we’re going to participate in the Great Big Crunch.  And we've got hundreds of apples to share!   One for EVERYONE! 

At exactly 2:30pm, the countdown will begin... 10, 9, 8, 7, 6, 5, 4, 3, 2, 1... CRUNCH!  We'll all take a great big bite of a tasty apple at the exactly the same time.   Actually, there will be schools and other organizations crunching at the very same time, all across Canada.  Hence the name, The GREAT BIG CRUNCH.  

It will an EPIC afternoon snack!  Can’t wait to crunch with you!

Yummy Pasta

One thing’s for sure... KIDS LOVE PASTA!!!   Yay, noodles!!!  So, why not make some pasta for school lunch?  Pack this meal in a small thermos. It will stay warm for hours. It makes the perfect waste-free lunch.


There are many ways to prepare the perfect pasta:


~Make it simple, just add BUTTER.      
~Or add some CHEESE (parmesan or cheddar). Yum!
~Can’t go wrong with TOMATO Sauce.
~Mmmm... PESTO!
~MEATBALLS will surely be a hit.
~Toss in some VEGGIES too.
~ALFREDO anyone?
       
Now that we’ve got our toppings sorted out… here’s another tip. Cook a BIG POT OF PASTA on the weekend and use the leftovers for school lunches.  


Pasta for lunch! It's soooo yummy! And absolutely waste-free! It's easy to make.  It's a perfect alternative to boring old sandwiches.  It’s the right choice for your child's school lunch.

Breakfast is the New Lunch

Looking for a new school lunch idea?   Why not pack breakfast for lunch?  'Cause everyone knows that Breakfast is the New Lunch!   ;-)   And kids are going to LOVE it!

Option #1
Pour a favourite cereal in a reusable container.  Pour some milk in a thermos.  Maybe a third container with some blueberries, raspberries or strawberries.  And don't forget to pack the spoon.   A quick and easy breakfast.  Oh sorry, I mean a quick and easy lunch.  


Option #2
How about an Egg McMuffin (without all the restaurant packaging)?   All you need is a toasted english muffin, an egg and some cheese.   I like adding bacon as well.   Voila, a breakfast sandwich for lunch.  

Option #3
How about some pancakes?   They're so easy to make.   Place them in a reusable container.   A side of maple syrup in a small container.   Maybe some berries too.  Kids are going to love them!   Note:  Substitute Eggos for pancakes... same lunchtime thrill.

PC’s Famous Oatmeal Raisin Cookies

If you go to Jackman P.S., you probably know PC.   She is a wonderful, caring adult in our school.  You might have seen her in the lunchroom or helping out in kindergarten or helping first graders learn how to read.  What would we do without her?   


Did you know PC is also an excellent baker?  Yep, she is! She makes really good cookies, especially OATMEAL RAISIN COOKIES!!!  And she’s happy to share this recipe with Jackman.  


Ingredients:
  • ¾ cup butter
  • ¾ cup white sugar
  • ¾ cup brown sugar
  • 2 eggs1 tsp vanilla
  • 1 ¼ cup flour
  • 1 tsp baking powder
  • ¾ tsp cinnamon
  • ¼  tsp salt
  • 2 ¾ cups rolled oats
  • 1 cup raisins (or chocolate chips)
Instructions:
  1. Preheat oven to 375 degrees
  2. Add butter and sugars in a small bowl.  Stir until smooth.
  3. Next, add the eggs and vanilla.  Stir again.
  4. In a separate bowl, add the floor, baking soda, cinnamon, salt. Mix thoroughly.   
  5. Now, put it all together.   Stir again.
  6. Wait, there’s more.  The oats and raisins.  Dump them in and stir one last time.  Now the cookie dough is ready.
  7. Spoon out the dough onto baking sheet lined with parchment paper.  Press the dough to make it flat.
  8. Bake for 20 minutes.   
There you have it.   PC’s not-so-secret cookie recipe.  Thanks for sharing. No need for store-bought, packaged cookies. Nothing beats a fresh, home-baked cookie for your school lunch and snack.

Radical Raisin Rounds

These raisin biscuits are hitting the stage with a radical taste!   Not only that, but they’re also eco-friendly. Rockstars love raisin round snacks. Power food, and so much more!  There delicious and easy to make!  And yes, raisins ROCK! So what are you waiting for?  Start baking already!


Ingredients:
3 cups flour
1 tbsp baking powder
½ tsp baking soda
½ tsp salt
3 or 4 tbsp sugar
¾ cup butter
1½ cups buttermilk
½ cup raisins (or more)
Instructions:
  1. Preheat oven to 375 degrees.
  2. Line 2 cookie sheets with parchment paper.
  3. Combine flour, baking powder, baking soda, salt and sugar in a large bowl.
  4. Now add the softened butter.
  5. Stir in the buttermilk.  The dough will be sticky.
  6. Now it's time for those RADICAL RAISINS!  Go ahead… stir them in!
  7. Put the delicious dough on a floured surface and sprinkle a little flour on top.  Use your hands to pat dough until it is ½ inch thick.
  8. Use a round cookie cutter (or a small round drinking glass) to cut out dough into round pieces
  9. Place the rounds on a cookie sheet.  Gather dough scraps, pat them down and cut some more.
  10. Bake the raisin rounds for 15 minutes, until slightly golden.  Cool on cookie sheets afterwards.  


Now that you’re done, you can have parties, just like rockstars!  Radical Raisin Rounds have radical taste!  I’m pretty sure you already know that.

Personal Pizzas

Hey kids... This recipe will teach you how to make your own personal pizzas.  That’s right, YOUR VERY OWN PIZZA!   You can add your own personality!  Whatever you like.   It makes a perfect lunch for school.   And yes, it’s easy, even kids can make their own lunch.  

Ingredients :
1 english muffin, toasted
pizza sauce
shredded mozzarella cheese
Toppings of your choice

  1. Split the english muffin in half.  Toast the english muffin halves in the toaster.

  1. Smother each muffin half with the pizza sauce and cheese.  

  1. Then add your chosen toppings.   Mushrooms, peppers, bacon, sausage, ham, pineapple, onion… the options are limitless.  

  1. Microwave on high for 30 to 45 seconds or bake in the oven for about 5 minutes.   Your pizza will be ready in no time.

  1. Let it cool and then pack it in a reusable container and take it to school.

Hope you like your pizza.  Bet your lunch buddies will take one look at your lunch and say, ‘Wow!”  Just imagine what your friends will say when they discover that you made it yourself. You'll be the talk of the lunch room

Homemade Granola Bars

You know those granola bars you bought at the store yesterday?   Well you can make even better granola bars at home.  They cost less and taste a whole lot better!   Also, you can change this recipe to make it just right for you.  I mean, how do you know what`s in the store granola bars. Do you read the label?  With homemade granola bars, you know exactly what’s in them and you choose all your favorite ingredients.  Don’t like pumpkin seeds? Try sunflower seeds. Don’t like raisins?  Use dried apple. You’re the boss of this recipe! Make it however you like. So, get ready to make your very own scrumptious granola bars!  You may never buy wrapped granola bars again.

Ingredients:

2 ½ cups oats
½ cup pumpkin seeds
1/3 cup honey
1/4 cup butter
1/4 cup brown sugar
½ tsp vanilla
1/4 tsp salt
½ cup dried cranberries, raisins
1/4 cup chocolate chips

Instructions:
  1. Spread the oats and seeds on a tray and toast in oven at 350°F for 5 minutes, then stir. Now toast for another 5 minutes.  Transfer to a large bowl.
  2. Combine honey, butter, sugar vanilla and salt in small pot and melt on the stove, stirring occasionally.
  3. Pour the sugar mixture on the oats & seeds.  Mix well.  
  4. Wait 5 minutes before adding raisins and chocolate.   Mix again.
  5. Pour onto pan lined with parchment paper.  Cover with another piece of parchment paper.   Press down very firmly.    
  6. Place in fridge for about 2 hours.   
  7. Now, one more step… cut into bars with a sharp knife.

There you have it… homemade granola bars.   And NO wrappers!   These snacks are completely waste-free.   And totally delicious. Bon apetite!

Bye-Bye Boring Sandwiches

Perfect Pork Pitas

Are you tired of the same, old sandwich in your school lunch?  Are you ready for something new?   Boy, are you lucky!   Cause, I have a great sandwich idea for you… PERFECT PORK PITAS!   They’re easy to make.   And super yummy too. Bye-bye boring sandwiches. Hello delicious lunch!


Ingredients:
Your Favourite BBQ SauceSome Leftover Pork (or Chicken or Beef)Small PITASShredded Cheese


Instructions:
  1. Chop up the cooked pork (chicken or beef) and put in a bowl.  Add the bbq sauce and stir with a spoon until well mixed.


  1. Cut each PITA in half to make pockets.


  1. Spoon some BBQ meat into each pita pocket. Sprinkle some CHEESE on top.  (Optional:  Add some veggies like onions, carrots, lettuce, cucumber, peppers…)


Just like that… a quick and easy sandwich.  An exciting lunch for you!   BBQ PORK PITAS will soon become the new favorite!!!  Who’s up for seconds?

Rice Krispee Squares

So, you're walking down aisle #4 in the grocery store... and there they are... the pre-made, pre-packaged, pre-pared Rice Kristpee Squares.   And you think to yourself, "I bet my kids would love these".   

Well, I got news for you.  I know something they'll love even more... homemade Rice Krisppe Squares. 


Actually, they won't just love eating them... they'll love making them.  With a little adult supervision and assistance, this is a simple snack kids will enjoy making themselves.  My kids have been making them for years.

Lucky for you, the recipe is written on the inside of every Rice Krispee box. But to make it easy, I'll record it for you right here.   You'll soon discover just how easy it is to  make Rice Krispee Squares.  

Ingredients:
1/4  cup butter 
40 marshmallows 
1/2  tsp vanilla (optional) 
6 cups of Rice Krispees
Instructions:
1.  First, melt the butter in a large pot over low heat on the stovetop.  
2.  Then, add the marshmallows and stir.   Keep stirring until the marshmallows are all melted.   
3.  Turn off the stove, and add the vanilla.   Stir again. 
4.  Finally, add the Rice Krispees.   And stir one last time, until the cereal is coated with marshmallow. 
5.  Pour the mixture into a pan.  Press it down.  Let it cool.  Once it's cool, cut the snack into squares and pack them away into a reusable container.  
Ooey, gooey, delicious!  And super easy to make.  And best of all, practically waste-free.  There's no wasteful packaging.
